Several years ago, one of my coworkers approached me in the office and asked me if I had heard about this new website called Pinterest. He explained it as an electronic bulletin board where you could “pin” up all kinds of things that interested you. His wife loved it and thought I might want to try it. I was skeptical, but I told him that his wife could send me an invite and I would check it out. Once I logged on, I was hooked. I was pinning things like crazy: home decor ideas, trip ideas, favorite quotes, and of course, recipes.
I don’t even want to think about how much money Pinterest has cost me between renovating our kitchen and master bath, to frequent Saturday morning trips to Wegman’s to buy the ingredients for all of the delicious recipes that I came across. This leads me into sharing 2 of my favorite recipes that I have found on Pinterest. I mean, I have tons that I love, but I wanted to share a few that are staples in the Grube household.
The first recipe is for Egg Roll in a Bowl. It is basically a deconstructed egg roll without the deep-fried wrapper. This dish has tons of flavor from fresh cabbage and carrots, along with sesame, ginger, and soy. Not only is this a quick and easy recipe, but it is a great way to use up the numerous heads of cabbage that have been in my weekly CSA shares from our local farm. When fresh cabbage is not as plentiful or when I don’t feel like chopping it up, I substitute a bag of fresh, shredded coleslaw, which does the job beautifully. The other great thing about this recipe is that it’s easy to make it low carb if you are watching your diet. If you choose to substitute the ingredients with low carb options, I promise you, no one will know the difference. You can also make a double batch and have plenty to pack away in the fridge for quick lunches during the week. The original recipe calls for ground beef, but I have made this with ground chicken, ground turkey, ground pork, or a combo (my fave is mixing ground chicken and ground pork together). You can serve this dish on its own or you can serve along with homemade fried rice (or riced cauliflower to keep it low carb).

The second fave Pinterest recipe that I discovered is a great party food. Kentucky Hot Browns were created in Louisville, KY back in the 1920s. This recipe is for a slider version of the famous sandwich with a few tweaks, with my favorite being the King’s Hawaiian bun that it’s served on. I’m not going to lie; it does take a while to put these little sammies together, but man, is it worth it. They are made with smoked turkey, bacon pimento and gruyere cheese, then smothered in a sweet glaze and baked in a hot oven. They are to die for and I know that you will love them as much as we do. I usually double the recipe and make 24 slides so that I have some extra to eat later on.

I have gone to Pinterest a few times for ideas, but don’t think to look up everything….yet! It really does have ideas for just about anything! Thanks for the recipes.
