Chili-Coffee Rubbed Pork Loin

Ingredients

  • 1 Tbsp ground coffee
  • 1 Tbsp chili powder
  • 1 Tbsp paprika
  • 1 Tbsp brown sugar
  • 1 Tbsp salt
  • 2 Tsp onion powder
  • 1 Tsp black pepper

Instructions

  • Mix all ingredients together. If cooking via sou vide, rub seasoning mix liberally onto pork & place into bag.
  • Cook at 138° for 2 hours.
  • Remove from bag, pat dry, and sear in a hot, oiled skillet on all sides.
  • If roasting, season the tenderloin with salt and pepper and sear in a hot skillet on all sides.
  • Rub seasoning liberally onto pork and wrap in foil (add a few pats of butter in the foil).
  • Roast at 350° for about 30 minutes.
