Mix all ingredients together. If cooking via sou vide, rub seasoning mix liberally onto pork & place into bag.
Cook at 138° for 2 hours.
Remove from bag, pat dry, and sear in a hot, oiled skillet on all sides.
If roasting, season the tenderloin with salt and pepper and sear in a hot skillet on all sides.
Rub seasoning liberally onto pork and wrap in foil (add a few pats of butter in the foil).
Roast at 350° for about 30 minutes.
