Chili-Coffee Rubbed Pork Loin

Ingredients
- 1 Tbsp ground coffee
- 1 Tbsp chili powder
- 1 Tbsp paprika
- 1 Tbsp brown sugar
- 1 Tbsp salt
- 2 Tsp onion powder
- 1 Tsp black pepper
Instructions
- Mix all ingredients together. If cooking via sou vide, rub seasoning mix liberally onto pork & place into bag.
- Cook at 138° for 2 hours.
- Remove from bag, pat dry, and sear in a hot, oiled skillet on all sides.
- If roasting, season the tenderloin with salt and pepper and sear in a hot skillet on all sides.
- Rub seasoning liberally onto pork and wrap in foil (add a few pats of butter in the foil).
- Roast at 350° for about 30 minutes.
