Prepare pasta. Cook 1 lb pasta according to package directions. While the pasta cooks, continue to the next step. Make sure to reserve ½ cup of the pasta cooking water to use in step 4.
Heat olive oil over medium-high heat in a skillet large enough to hold all of your pasta. Add bacon and saute until most of the fat has rendered out.
Add onions to skillet and saute until soft, adjusting the heat as necessary to not burn onions (or yourself).
Place minced garlic in the skillet and saute until fragrant, and then quickly add ¼ cup of hot pasta water (this will make your sauce starchy and prevent your garlic from burning).
Drain pasta and add directly into the skillet with bacon, onions, and garlic. Stir to coat. If needed, add more pasta water. Serve immediately.
